I wanted to make soup!DOUBLE PAN can pull off Dutch-oven duty and a lot more — a reliable workhorse — but its one limitation is capacity.
So we designed a deeper version: just the lower half of DOUBLE PAN, made into a proper pot. We commissioned the mold ourselves and put it into production.
For dishes like curry — where you sear first (Maillard reaction in full effect) and then turn it into a soup — this pot really shines. Iron behaves differently from other materials; it leaves the kind of fond on the pan you can build a stock around. The vegetable soup you cook in it is exquisite.
And because it's iron, it's tough. Use it rough — it can take it. Put the lid on, pile charcoal on top, and you've got a Dutch oven.
