The best of times, around a shichirin

That alluring sizzle. The fragrant smoke rising off whatever's on the grate. You take your first sip. Pluck a piece of yakitori straight off the heat, ignore the burn, and pop it in your mouth. Wash it down. Around the shichirin you talk about your day, you drink, you let time slow. As the relaxed air settles among the people there, the noise of the world quietly dissolves away.

The shichirin — that perfect device for chill, communal time — spread through Japanese homes in the Edo period as a simple combustion appliance (something like a portable gas stove today). It grills, it simmers, and in a pinch it heats a room — a true all-rounder.

You can find them at any home center; they're not hard to come by. But how many people have stood there, considered one, and walked away at the last second?

The reason, almost certainly, is the mismatch between modern living and "live fire." There's no room for charcoal in a modern home, and exposure happens only at restaurants or one-off barbecues. Everyone knows charcoal cooking is delicious and fun — and yet, not being able to bring it into your own life is, frankly, a waste.

A clean ending, by lid

The biggest pain with charcoal is putting it out after the meal. With YOKA SHICHIRIN++, just close the lid and the fire smothers itself out. No fire-extinguishing pot required. Linger over the night a little, then close the lid, and the gathering ends quietly. The leftover charcoal can be re-used to start your next fire — that "clean wrap-up" is part of why this is a tool for grown-ups.

Wash it down. Reset.

Because YOKA SHICHIRIN++ is all stainless steel, you can wash it whole — something a traditional shichirin doesn't allow. After grilling fatty fish or meat, just clean it like any kitchenware and reset. Polished and waiting for next time, the way a kitchen tool in a real restaurant is. The dignity of using clean tools — applied to the shichirin.

YOKA SHICHIRIN++ ran a crowdfunding campaign through February 2025, and to our gratitude received more than \32 million in support — proof, in numbers, of how many people were interested in a shichirin but had never found "the one."

Real fire, used safely

A shichirin is a tool that uses real fire. Of course a gas stove uses real fire too, but charcoal demands far more knowledge and technique to control. The safety risk is higher — and that, I think, is the main reason people stay away from shichirin.

And then there's ash. Not dangerous in itself, but it scatters, gets on things, and is generally a hassle.

Even if a shichirin is fun and the food is delicious, weighed against these problems, most people end up tilting toward "I won't bother." So we tackled the problems by changing the very mechanisms that everyone took as given.

First, we removed the air vents from the bottom. They have a purpose, sure — but they also bring risks. Ash (sometimes mixed with sparks) spills out of them, maintenance suffers, and the body gets weaker.

Vents do let you adjust the heat, but without charcoal know-how that "control" is actually difficult.

Weighed all together, we concluded: lose the vents.

Instead, we designed it so that air drawn in from the top fully feeds combustion — delivering heat on par with a vented design.

That also leads to "you can extinguish it inside the body." Normally to put out leftover charcoal you have to pick it up with tongs and move it to a fire-extinguishing pot. Sparks fly. Ash spills. The kicker is that the small lit pieces you couldn't transfer remain inside the shichirin. That isn't workable in a modern, ordinary setting.

YOKA SHICHIRIN++ changes that completely. To extinguish, just put the lid on. With no bottom vent, the lid seals it; no sparks fly, no ash falls. A clean shut-down. Lock it, and even if it tips the lid won't come off — fully safe. (The body itself stays hot for about an hour, so do be careful.)

A two-tier grate adds a new way to play

YOKA SHICHIRIN++ has two grates stacked on top of each other. As a starting point, the upper tier is high heat and the lower is medium (in reality there are more nuances), but as in the photo above, you can keep cookware on the upper tier while grilling on the lower one. That arrangement didn't exist on traditional shichirin — and it raises the fun another notch. For those who want to go deep on shichirin cooking, there's plenty more to explore.

In this 5th lot, the legs of the core have been refined. The stopper that prevented the charcoal starter from sliding around used to be a welded ball; now the legs themselves are bent to act as the stopper, for greater durability.

From the 3rd lot onward, the shell was also improved. The upper and lower parts used to be welded together — now they're a single integral piece. The grate-locking tabs are riveted, reducing the risk of heat distortion from welding.

How is it different from an ordinary shichirin?
It is all stainless steel: just close the lid and the charcoal smothers out inside the body — no fire-extinguishing pot needed. With no bottom air vents (a patent-pending top-fed air design), ash barely scatters, and you can wash the whole unit after use.
Can you go from lighting to extinguishing in one unit?
Yes. Using the included charcoal starter, you can light, extinguish, and re-light entirely within the body.
Can you cook on two tiers?
It has a two-tier grate, so you can cook at different heat levels at once — for example, simmering on the upper tier while grilling on the lower.
